CRUNCHY PEANUT BUTTER CUPS
I saw these on Pinterest and I HAD to try them. They were pretty easy to make and pretty tasty. I changed it however to make it my own and to make what I think better.
Crunchy Peanut Butter Cups
1/4 Cup Butter
3/4 Cup Natural Peanut Butter Cups
3/4 Cup Graham Cracker Crumbs
1/4 Cup Icing Sugar
1/4 Cup Milk
1 Cup Milk Chocolate Chips or Semi Sweet Chocolate Chips
Sea Salt
Line mini muffin tins with papers
Microwave Peanut Butter and Butter for 45 seconds. Stir until
smooth.
Add Graham and Sugar, combine with the Peanut Butter mixture.
Fill cups half full with Peanut Butter mixture. Chill in fridge for 15 minutes.
When cups are chilled, microwave chocolate and milk for 25 seconds. Melt until just smooth, you may have mic it for a few more seconds.
Spoon chocolate over each cup. Sprinkle with Sea Salt and chill.
Makes Approx. 30-34 Cups.
Note : I added salt to some it tastes good either way.

Caramel Apple Pork Chops
A friend posted this on her Pinterest today and I just so happened to have Pork Chops out so I thought I would give it a try. I changed a few things. The idea was good,but if I would have made them her way they would have been tough. I will link her recipe at the bottom.
Caramel Apple Pork Chops
Ingredients
4 (3/4 inch) thick pork chops
1 teaspoon vegetable oil
2 tablespoons brown sugar
salt and pepper to taste
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons butter
2 Royal Gala apples - peeled, cored and sliced
3 tablespoons toasted pecans
Directions
Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
Heat a large skillet over medium-high heat. Rub chops with a little salt then brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes.Turning once half way through. Transfer to the warm dish, and keep warm in the preheated oven.
In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops
Turn the heat up on the oven to 325 and bake the pork chops for another 40 minutes. Turn once to make sure the chops are covered in the sauce. While chops are cooking turn stove to medium heat and in a small frying pan place pecan halves in the pan and toast until they just turn a bit darker. Chop pecans and when the chops are done sprinkle the pecans on top.
Sprinkle with pecans. Enjoy !

Who's Food is it Anyway ?
As I've said before I'm not a really good blogger. Since I'm at home most of the time I've been doing a lot of cooking and baking so I figure why not blog about it. I need something to keep me sane !! :)
Tonight I tried out Paula Deen's Crab Cakes. I have to say they were pretty good. Now I used fake King Crab and Lump Crab but no one complained.
I roasted more peppers and garlic than I used for this recipe. I just stored the rest of Veggie Sub :)
This is the Roasted Red Pepper and Garlic Aioli
I used
1 or 2 sm red peppers ( from my garden :) ) or use one med cut into cubes
3 cloves of Garlic
2 or 3 tablespoons of Olive Oil
I roasted these for about 45 minutes at 325 Oven
Now you can make your own mayo I just used Miracle Whip next time I may try Hellmans
3/4 Cup Mayo of choice
1/2 Cup Roasted Red Peppers
3 cloves of Roasted Garlic
3 Tablespoons of fresh Chives ( from my Garden)
1 teaspoon of minced garlic (from a jar)
1 teaspoon of fresh lemon juice
Add everything except the chives to your food processor or what ever you blend things up with and blend till as smooth as you like. I like little flecks of the red pepper to show then add the chives and stir until blended. Put in the fridge to chill and to let the flavours blend.
Paula Deen's Crab Cakes
1 lb of King Crab
1/3 Cup Ritz Crackers Crushed
3 Green Onions chopped Fine
1/2 Green Pepper ( I used Orange) Chopped Fine
1/4 Cup Mayo
1 Egg
1 teaspoon Worcestershire Sauce
1 teaspoon Dry Mustard
1/2 Lemon Juiced
1/4 teaspoon Garlic Powder
1 teaspoon Salt
Dash of Cayenne ( I used Chipolte)
Flour (I used Panko)
Oil (for Frying)

Make little patties and then roll in the flour. I used Panko for extra crunch but I'm thinking maybe
thats why there were a little too dark around the edges.

Anyway not such a good blogger but in my defense I really haven't talked to my sister shes benn talking to my Mum. They are in Oslo Norway and my nieces father and mother took Jade and Ian around to see the sights. So I'm sure they must have seen many things most tourists don't get to see. I think they are there for one more day and then they hop onto a ship and off they go on their cruise through Europe.

A Busy Day
This is my sister and Bro in law (better late than never) on their way to the airport. Their oldest son took this. I would say they look pretty darn excited !
So today they did a Hop on Off tour. It was on a Double Decker bus. In the morning it was cold and VERY windy but warmed up by the afternoon which was nice. They sat on the top of the bus too :) Thats what I call Troopers !!
I guess the first stop was at the National Art Gallery. They saw original paintings by Van Gogh Sunflowers
This isn't my brother in law. But I would have done this for sure. How often do you get to stand right next to such a AMAZING work of art. : )
There was also art by Monet Water Lilies and Renoir
Lady in a boat. I know for sure that they saw the sun flowers but the other 2 I just picked random artwork cause I like them the best :) Well I guess thats not very random is it :S hmmm ANYHOO....
They also had lunch at the museum. They had whats called a Ploughmans Lunch which had cold pork pie :S ewww and cheese and meats and pickle plate.
They also went and saw Kensington Palace. As I was looking for photo's of the Palace it said this is where Diana and Charles lived and where Will and Kate will live as well. How fun is that !!

Jade and Ian's Trip to Europe through My Eyes
Well since I probably won't be getting to the U.K anytime soon I thought I might keep a little blog about their trip from what they tell me.
So it was actually the second day of their trip. There were some issues with the phone I guess they text 2 times yesterday and I didn't get any. They got some phone where the call gets transferred from Canada to the U.S and on to the U.K. Meh ANYWAY
They had a good flight no details so there must not have been any crazy people on the plane. They are staying at the Russell Hotel in London. Its a pretty nice hotel from the pics online
I may get to see their actual pictures on day but I'm not going to hold my breath LOL
They went to a museum which my Mum doesn't remember which one it was. My end of the conversation was they had sea food chowder and steak with Bearnaise. Wonder what Bearnaise would taste like on a veggie burger hmm. It was 10 pm there so they were having a snack of wine apples and balsamic vinegar chips from Spain. Apparently the city that is known for is chips would make their own Crisps.
Well that wasn't very informative but that was what I got from the conversation today.
